Celebrate the holiday — especially the food: Student Edition. Add flavour to the table with these easy and affordable meals and desserts. Whether you are searching for new breakfast ideas that fit into your budget or something new to add to the table, there is something for everyone!

 

Babbelas Mix

Babbelas mix is perfect for when you have a babbelas or leftover food. This dish is a mix of leftovers, eggs, and sauce.

 

You will need:

• Leftover meat

• Eggs

• 1 can baked beans

• Canned onion and tomato mix, boerewors relish, or any other relish

• Any chopped vegetables (onion, carrot, mushrooms, etc.)

• Cheese

 

Method:

• Chop the meat into bite-sized pieces and add it to a large pot.

• Add the vegetables, relish, and baked beans, and mix well.

• Add the eggs on top, but do not mix.

• Add cheese as desired.

• Cover the pot and cook until the eggs are set.

• Serve on toast.

 

 

Breakfast Muffin Cups

This is a simple recipe, but feel free to spice it up!

 

You will need:

• Eggs

• Bread

• Tomato

• Some sort of meat (bacon, viennas, ham, etc.)

• Onion

• Muffin pan

 

Method:

• Cut a circle out of the bread that fits into the muffin pan.

• Chop your ingredients and layer them on top of the bread in the muffin pan.

• Add the meat.

• Pour the beaten eggs into the muffin pan.

• Top with cheese and bake until the eggs are cooked and the cheese has melted.

 

 

Egg Fried Rice

It sounds a little weird and complex, but it isn’t!

 

You will need:

• Rice

• Eggs

• Spinach, green pepper, mushrooms, etc. (whatever you prefer)

• Chicken thighs

• Sauce (optional)

 

Method:

• Cook the rice in a pot.

• Cook the chicken and season as desired.

• Cook the eggs in a separate pan and add vegetables such as spinach, celery, or green pepper.

• Before the eggs are completely cooked, add the rice and mix well.

 

 

Taco Lettuce Wraps

You will need:

• Ground beef

• Tomato

• Corn

• Avocado

• Onion

• Cheese

• Lettuce

 

Method:

• Cook the beef.

• Lay out a lettuce leaf and arrange your toppings, then add the meat.

• Fold the lettuce closed and enjoy.

 

 

Pea Salad

A funny-sounding salad, but definitely worth trying!

 

You will need:

• Peas

• Bacon

• White sauce

 

Method:

• Dice the bacon and cook it in a pan.

• Cook the peas.

• Mix the peas, bacon, and white sauce together.

• Chill in the fridge and enjoy.

 

 

Tuna Casserole

Tuna is the ultimate ingredient to experiment with. Allrecipes provides a delicious recipe with a video demonstrating each step.

 

You will need:

• 1 packet pasta

• 2 cups frozen green peas

• 2 cans condensed cream of mushroom soup

• 2 cans tuna, drained

• Cheese of your choice

• 1 chopped onion

 

Method:

• Boil a pot of water, add the pasta and peas, simmer for 8–10 minutes, and drain well.

• Stir in the condensed soup, tuna, cheese, and onion until well mixed and the cheese has melted. Serve hot.

 

 

Stuffed Butternut Squash

The hole isn’t just for seeds!

 

You will need:

• Butternut squash (depending on how many people you are feeding)

• Mince

• Frozen mixed vegetables

• Cheese

 

Method:

• Wash the butternut, cut off the stem, remove the seeds, and slice it in half. Place it in a pressure cooker or pot with a little water and cook for 10–15 minutes until tender.

• Cook the mince in a pan until lightly browned, then add the vegetables. Cover and cook until the vegetables are tender. Add spices as desired.

• Drain the butternut, fill the cavity with the mince and vegetables, and top with cheese if you like.

 

 

Kerksop

An easy soup made from a combination of chicken soup, bacon, pasta, and frozen vegetables.

 

You will need:

• Chicken soup sachets

• Bacon

• Pasta

• Frozen vegetables

 

Method:

• Cook the bacon, onion, and green pepper.

• Mix milk, water, and pasta in a bowl and add it to the bacon mixture. Let it cook on the stove.

• Add the soup powder and water, then cook until everything is done.

• Add a little cream, let it simmer, and serve with bread.

 

 

Microwave Custard Slices

An easy favourite you can prepare any time. Foodloversrecipes has the perfect custard slice recipe!

 

You will need:

• 1 cup sugar

• 125 ml custard powder

• 1 L milk

• 80 ml butter

• 20 ml vanilla essence

• Cream crackers

• Icing sugar

 

Method:

• Mix the sugar and custard powder.

• Add the milk and mix well.

• Add the butter and vanilla essence.

• Microwave on high for 10 minutes, stopping every 2 minutes to whisk. The custard is ready when it forms patterns while whisking.

• Line cream crackers in a baking dish.

• Pour the custard over the crackers and add another layer of crackers on top.

• Let it cool.

• Mix 1 cup icing sugar with 1 tablespoon boiling water and a little lemon juice.

• Spread the icing over the crackers, let it set, and enjoy.

 

 

Lemon Cheesecake

Sweet with a fresh, lemony taste.

 

You will need:

• 1 packet lemon jelly

• 200 g plain cottage cheese

• 1 packet biscuits

• 200 ml cream

• 1 cup lemon juice

• 1 can condensed milk

 

Method:

• Line a baking dish with biscuits.

• Mix the condensed milk and cottage cheese.

• Boil the lemon juice, add the jelly, and mix until dissolved. Place in the fridge until cold but not set.

• Mix the jelly with the condensed milk and cottage cheese.

• Whip the cream until stiff.

• Fold the cream into the mixture and pour it over the biscuit base. Voilà!
